I have been using the fishtail cannon heads w/third burner for the last 14 years.It gives the knife-like sharp flame as you described.The third burner swings out and out of the way if need be,although I rarely go without it.Ive had employees the prefer the cannon style cannon head [much wider flame pattern] to get the desired amount of heat,but I wasnt very happy with their welds as those heads seem to heat up too large of an area for a nice clean weld.IMO,with the fishtail heads,your heating has to be more accurate and even than the other heads or crossfires.The third burner is very helpfull in getting alot of heat fast,as I like to work hot.I would never go without it,and recommend it to anyone using the fistail cannon heads.

I started out on crossfires,and have tried them a few times here and there.I dont care for them,but I guess its what ever you are used to and comfortable with.I was trained and made to use the fishtails, so thats what I feel the best using.Which ever you use,you have to give a fair amount of time and practice to see what suits you better.
