To a large extent it depends on where you are located and your experience and ability. In the Southeast U.S. it varies widely: Anything from minimum wage (a beginner being taught by the employer) to $20.00/hr. for hourly shops, to $0.85/ft. to $1.50/ft. for channel letter shops, to so much per unit or per letter, etc. I am sure they exist in some areas, but I am not aware of any shops in my area (Southeast) paying a percentage as John mentioned. That in itself may be area specific as some shops follow what others in their area are, or have been doing.
